It is rich in minerals, such as potassium, calcium, iodine, zinc, cobalt, as well as pectin and essential oils, and it is especially recommended for children, pregnant women, convalescents and elders.
Its biggest advantage over other vegetables is that it is very easy to digest when cooked or fried, and therefore it cannot be eaten by people who have problems with digestion, catarrh of the stomach and intestines, and increased number of red blood cells.
Raw carrots should be taken only in the form of juice because it is easily digested and nutritious and remedial ingredients are more concentrated in it than in the raw fruit. Though, the juice made from this vegetable is a valuable elixir for the organism. It is recommended to people who lead stressful life because it keeps the nerves of exhaustion. Ingredients: 5 kg carrots, 250g garlic, 2 jars of horseradish, 1l oil, salt and vinegar

Preparation: Peel and wash the carrots, then chop them using grater. After that, add horseradish, salt, vinegar and oil. Cover and let marinate in the refrigerator to allow the flavors to meld and permeate the carrots. The next day, pack it into clean jars and seal with cellophane and lids
